Ingredients

1/2 teaspoon salt
1/4 cup vegetable oil
1/2 teaspoon black pepper
2 tablespoons cornstarch, divided
1 large egg
1/4 cup brown sugar
1/4 cup soy sauce
1 tablespoon rice vinegar
1 cup pineapple, cubed
1 teaspoon ginger, minced
1 large red bell pepper, chopped
1 large green bell pepper, chopped
4 medium chicken breasts, sliced
1/2 teaspoon red pepper flakes
1/2 cup finger hot peppers

Directions

  • 1 Prepare the ingredients by chopping up the bell peppers and pineapple.
  • 2 In a small bowl, add the brown sugar, ginger, red pepper flakes.
  • 3 Pour in the rice vinegar and soy sauce. Add 1 tablespoon corn starch.
  • 4 Whisk until combined and set aside.
  • 5 Cut up the chicken and place it in a bowl.
  • 6 Add the salt and black pepper. Add 1 tablespoon corn starch.
  • 7 Mix together until chicken is covered evenly.
  • 8 Prepare a skillet over medium heat and heat the vegetable oil.
  • 9 Toss in the chicken, stir while cooking 3-4 minutes.
  • 10 Add the green peppers, red peppers and the finger hot peppers.
  • 11 Stir together and saut√© for another 5 minutes.
  • 12 Add the pineapple and drizzle over the sauce.
  • 13 Combine all ingredients with the sauce and simmer for 3 minutes.
  • 14 Serve with white rice and enjoy!
