Ingredients

1 teaspoon salt
1/4 cup olive oil
1/2 teaspoon black pepper
1/4 cup lime juice
1 cup cilantro
1 cup orange juice
1 cup salsa
2 tablespoons vinegar
4 cloves garlic
1 large avocado
1 large jalapeno pepper
7 ounces chipotle peppers in adobo sauce
8 small corn tortillas
2 pounds skirt steak

Directions

  • 1 Prepare ingredients by slicing up jalapeno, cilantro, and garlic.
  • 2 Juice the limes and oranges, set aside.
  • 3 Combine orange juice, lime juice, olive oil, vinegar, jalapeno, garlic, cilantro, salt, pepper, and the chipotle peppers in adobo sauce.
  • 4 Blend all the ingredients together until smooth.
  • 5 Place the skirt steak in a dish and pour over marinade.
  • 6 Refrigerate skirt steaks for 4-5 hours.
  • 7 Prepare a baker’s sheet with a wire rack.
  • 8 Place the steak on the wire rack and broil on high for 5 minutes a side.
  • 9 Let the steak rest for 3 minutes before slicing against the grain.
  • 10 Serve with warm tortillas, topped with your favorite salsa, an avocado slice and cheese.
  • 11 Garnish with cilantro and enjoy!
