Chocolate Mousse

3 tablespoons granulated sugar
1 teaspoon vanilla extract
4 large eggs, whites only
6 ounces semi-sweet chocolate chips
1 3/4 cups whipping cream


  1. In a frozen bowl (freezer for 10 min), mix the whipping cream until soft peaks form.
  2. Pour in the vanilla and continue to mix until fully whipped, set aside in fridge.
  3. In a separate bowl, mix the eggs whites until foamy.
  4. Add the sugar and continue to mix until fluffy, set aside in fridge.
  5. Melt the chocolate and transfer to a big bowl.
  6. Add the egg whites and fold in until combined.
  7. Add the whipped cream and fold in until combined.
  8. Once mousse is blended together, refrigerate for 1 hour.
  9. Serve cold and garnish with whipped cream or shaved chocolate.
