In a frozen bowl (freezer for 10 min), mix the whipping cream until soft peaks form.
Pour in the vanilla and continue to mix until fully whipped, set aside in fridge.
In a separate bowl, mix the eggs whites until foamy.
Add the sugar and continue to mix until fluffy, set aside in fridge.
Melt the chocolate and transfer to a big bowl.
Add the egg whites and fold in until combined.
Add the whipped cream and fold in until combined.
Once mousse is blended together, refrigerate for 1 hour.
Serve cold and garnish with whipped cream or shaved chocolate.
