Ingredients

1/3 cup lemon juice
1 teaspoon salt
5 tablespoons olive oil
1/2 teaspoon black pepper
6 tablespoons butter
1/2 cup all-purpose flour
1/2 cup chicken stock
1/3 cup parsley, chopped
2 cloves garlic, minced
1/3 cup capers, rinsed
2 large chicken breasts, butterflied

Directions

  • 1 Begin by chopping the garlic, parsley and slicing the lemon.
  • 2 Butterfly the chicken breasts and season with salt and black pepper.
  • 3 Dredge chicken into the flour, covering both sides evenly.
  • 4 In a large skillet, on medium heat, add the olive oil and 2 tablespoons of the butter.
  • 5 Once bubbly, add the chicken and cook for 3-5 minutes per side.
  • 6 Remove chicken and set aside.
  • 7 Add garlic, capers, chicken broth, lemon juice, salt, black pepper, and butter to skillet.
  • 8 Combine ingredients and stir until sizzling.
  • 9 Add chicken back to the skillet and saut√© for 3 minutes per side.
  • 10 Serve over your favorite pasta, and drizzle over the sauce.
